Did you know if you baked a pumpkin in the oven for 35 to 45 minutes you can use it like noodles? That is what I did! Last night I cut and cleaned a large pumpkin baked it in three baking dishes to make noodles.
Now that I had these noodles from the pumpkin, how would I use them?
The groundnut sauce was made with peanut butter, garlic, ginger root, dried shrimp and tomato paste. Later I added mushrooms and capers and ate it for dinner.
Today I prepared the pumpkin noodles with champagne grapes, cinnamon, ginger and brown sugar. This is what my mother had for breakfast along with peanut butter toast topped with coconut and goji berries served with a glass of cranberry juice.
The rest of the pumpkin is in the freezer to be used for another day. Next time I may prepare the pumpkin noodles with pasta sauce and non dairy cheese.
